Busting the protein myth....

 YES, our bodies definitely need protein, but many people believe we need to eat meat (red meat, poultry, fish, pork) in order to get enough protein to build muscle.  Olympian Kendrick Farris is completely VEGAN and he's no scrawny guy!!  
Did you know that plants contain protein too?  Stay tuned for more info on the next class in October where we will learn how to pack healthy plant-protein in to our daily diets!!

DINNER IS SERVED: Easy plant-based meals

HI ALL!!

I do NOT consider myself a great cook by any means, but I do like my meals to be healthy, filling and fuel my body for the next workout, which is probably why I have spent some time coming up with meals that are quick, nutritions, and require minimal cooking time.  When I am done with work in the evenings, I am usually starving, and I like to have something that takes less than 10 minutes to get ready for dinner.  Even better is if I can make something healthy to stick in the freezer and pull out when i’m in a hurry!  

For many people, plant-based = “rabbit-food", but this is far from the truth.  Salads are great sometimes, but they are probably not going to fill you up for long!  In addition to vegetables, a plant-based diet includes beans, legumes, potatoes, fruits, and whole grains.  I am not a strict vegan, and I am not going to preach “don’t eat meat, chicken, or fish”.  I prefer to think of plant-based eating as enhancing your diet and giving your more options, rather than limiting what you can eat.  

Please join me for a fun evening of learning about plant-based eating and enjoying a simple plant-based dinner after the lecture/demo!  I will show you how to pack a ton of seasonal vegetables (i.e. health promoting nutrients) in to a meal that can be cooking while you are working or playing!

Carb confusion

I recently completed my certificate in "Whole Foods Plant Based Nutrition" with eCornell University. Dr. Colin Campbell, author of the China Study was one of the professors, along with other medical doctors and experts in the fields of nutrition, psychology, and environmental issues.  It was a fantastic and fascinating program and I am really looking forward to sharing some of the information I have learned.   There is so much confusion and conflicting information about diet and eating these days and I often get asked if a certain food is good or bad.  Carbohydrates, especially, seem to get a bad reputation and I would like to clear up a few misunderstandings regarding carbs, gluten, sugar, and processed food!

Most people WANT to eat better, but are very busy and don’t have time for hours of cooking.  Also, with all the conflicting information it's difficult to know where to start.  What better meal to begin with than breakfast, the most important meal of the day??

In a 1-hr class on April 26th, I will attempt to clear up some of the confusion about carbs, gluten, sugar, and processed foods and help you make better decisions about what to eat.  I will also show you how to prepare a YUMMY, SUPER HEALTHY, VERY QUICK breakfast, with the push of a button! (and a few minutes of prep every couple of weeks).

We had a great group of 10 fun ladies and one brave gentleman for the Carb Confusion Event tonight! We had great discussions about simple vs. complex carbs, the "gluten-free"hype, and learned how to make a quick, healthy and yummy breakfast in the Instant pot! There were lots of suggestions for future topics of interest: meal prep for busy athletes, insulin and sugar, making healthy soups, good protein plant-based protein sources, lunches and dinners, "a week of eating well", substitutions for sugar addicts, how to avoid temptation and binge eating.  
Thanks to all of you who made it tonight, I had a great time!!!
